In American English, it is a "stocking cap" or "wool cap." In British English, it is a "bobcap." But in Canada (and the northernmost reaches of the United States), the name for a knit cap that covers all or part of the ears is known as a "tuque." The term comes from the French word "toque," a type of hat with a narrow brim or no brim at all. Tuques are usually made of wool, but nowadays synthetic fibers may be knitted into the garment. They are meant for winter climes, as demonstrated here.
